2026 Recipe Series: Unsung Heroes with Roland Swazy, Head Chef at Mother’s

Mother’s is a New Orleans staple that serves classic dishes ranging from grits, scrambled eggs, and enormous biscuits to po-boys and hearty comfort food. It was started by Simon and Mary (Mother) Landry in 1938, then purchased by Jerry and John Amato in 1986. They expanded the restaurant menu while staying true to the restaurant’s working class roots.

Roland Swazy began working in his early 20s at La Louisiane, a New Orleans restaurant run by Jerry Amato that is closed. He moved over to Mother’s when Jerry bought it, and his role at the restaurant has steadily grown to his current position of head chef. What he really appreciates about his job are the people; he said, “they make the job easy.”
