2024 Recipe Series: The Fish Dish with Mansur’s Cedar Roasted Redfish

Long before our local seafood ever meets the fork, there’s a narrative behind its journey. We see pieces of that story when we dine out at the great restaurants we enjoy in such abundance here. We see it in the networks of small, independent fishermen and fishing families working local waterways, carrying on traditions that run generations deep. It’s those connections, often unseen, perhaps underappreciated, that inspire this year’s campaign, called The Fish Dish.” Chefs at some of our favorite restaurants are sharing recipes that highlight the fish found in our area, and we are thrilled to present them with the evocative photography of Frank Relle and the personable illustrations of Kenneth Harrison.

Our current featured recipe is Mansur’s Cedar Roasted Redfish. For the first three years of their lives, redfish are found in shallow waters with muddy bottoms and submerged vegetation or around pilings and jetties. As they mature, the fish move into coastal waters. Redfish are a common fish in Louisiana, but since 1977, fishing regulations based on size have been in place to relieve pressure on spawning-sized fish. Not only are these fish common in our waters, they are common on our tables. Mansur’s on the Boulevard, a Baton Rouge-based restaurant, has a classic preparation involving a cedar plank that is hard to beat.
