We hope you’ve enjoyed this journey through our Louisiana waters with the evocative photography of Frank Relle and Kenneth Harrison’s personable illustrations. From water to table, learning more about the fish and their environments has been an incredibly interesting process, and we remain indebted to the networks of small, independent fishermen and fishing families working local waterways, carrying on traditions that run generations deep. So while we’ve shared the fish recipes in some of our favorite recipes, we are pleased to end with the recipe of one of those fisherman. Dino Pertuit’s favorite fish to eat and catch is the flounder, and he said that Dino’s Flounder is the dish he would immediately put on his menu if he had a restaurant. It’s become a favorite of ours, and we hope you will enjoy it, too.
